Holiday Leftover Morphs
Holidays are a time of food and family. And with all that food comes a lot of leftovers. Don't let it go to waste! There are lots of great things you can do that will save you time and stretch a dollar.
Turkey carcass - Don't throw that carcass out! Try making some turkey stock for soups. Boil your carcass with water, carrots, onions and celery. Add flavorings such as peppercorns, thyme and bay leaf. Strain out all the vegetables and bones and use the stock for turkey soup!
Mashed potatoes - Use those leftover mashed potatoes to top shepherd's pie, http://www.foodnetwork.com/recipes/rachael-ray/30-minute-shepherds-pie-recipe/index.html.
Shrimp cocktail and veggie tray - Grind leftover shrimp with celery, carrots, onions and salt and pepper to taste. Old Bay seasoning is also a great addition. Take the mixture and form small patties, fry in a small amount of butter and oil in a nonstick skillet until golden brown. Serve with mayonnaise flavored with lemon and garlic.
Leftover turkey - Make turkey and cheese melt sandwiches. Kids will love them! For grown-ups, add sharp cheddar and leftover cranberry sauce for a more sophisticated sandwich.
Leftover ham - Add ham to cheesy potatoes or egg and cheese omelets. Ham bones can also be used to flavor beans or white bean soup.
